Coconut Macaroons

Ingredients

  • 1/4 cup egg whites
  • 1 cup shredded coconut
  • 2 tablespoons honey or agave syrup

Directions

  • Preheat oven to 180 degrees.
  • Mix all ingredients in a bowl.
  • Form mixture into individual bite size portions.
  • Bake until golden brown.
  • Let them cool before eating.

Ingredients

  • 1 egg
  • 1/2 cup oat flour
  • 1/2 cup quick oats
  • 3/4 cup cow/almond milk
  • 1 tablespoon honey
  • 1 tablespoon coconut oil
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla

Directions

  • Mix together egg, vanilla, honey, milk, and oil.
  • In another bowl, mix together oat flour, quick oats, and baking powder.
  • Whisk together dry ingredients with wet ingredients thoroughly.
  • Heat a non-stick heat over medium heat.
  • Pour batter into circles.
  • Flip once bubbles appear and sides are slightly golden.

Ingredients

  • 15 medjool dates
  • 1 1/2 tablespoon almond butter
  • 1 1/2 tablespoon unsweetened cocoa powder
  • 1 tablespoon milk or water
  • 1 teaspoon vanilla
  • pinch of salt

Directions

  • Put all ingredients in a food processor and mix until everything is smooth,
  • Wet your hands and scoop a teaspoon of the mixture, roll them into balls, and drop them into cocoa powder then roll them around a little to completely coat the truffle.
  • Store in the fridge in an air tight container.

  • 2 teaspoons vanilla extract
  • 2 tablespoons honey

Directions

  • Remove skin and pit of the avocado.
  • Add all the ingredients in a food processor.
  • Mix well.
