Coconut Macaroons
Ingredients
- 1/4 cup egg whites
- 1 cup shredded coconut
- 2 tablespoons honey or agave syrup
Directions
- Preheat oven to 180 degrees.
- Mix all ingredients in a bowl.
- Form mixture into individual bite size portions.
- Bake until golden brown.
- Let them cool before eating.
Oat pancakes
Ingredients
- 1 egg
- 1/2 cup oat flour
- 1/2 cup quick oats
- 3/4 cup cow/almond milk
- 1 tablespoon honey
- 1 tablespoon coconut oil
- 1 tablespoon baking powder
- 1 teaspoon vanilla
Directions
- Mix together egg, vanilla, honey, milk, and oil.
- In another bowl, mix together oat flour, quick oats, and baking powder.
- Whisk together dry ingredients with wet ingredients thoroughly.
- Heat a non-stick heat over medium heat.
- Pour batter into circles.
- Flip once bubbles appear and sides are slightly golden.
Chocolate fudge truffles
Ingredients
- 15 medjool dates
- 1 1/2 tablespoon almond butter
- 1 1/2 tablespoon unsweetened cocoa powder
- 1 tablespoon milk or water
- 1 teaspoon vanilla
- pinch of salt
Directions
- Put all ingredients in a food processor and mix until everything is smooth,
- Wet your hands and scoop a teaspoon of the mixture, roll them into balls, and drop them into cocoa powder then roll them around a little to completely coat the truffle.
- Store in the fridge in an air tight container.
Chocolate fondue
Ingredients
- 1 large avocado
- 4 teaspoons unsweetened cocoa powder
- 2 teaspoons vanilla extract
- 2 tablespoons honey

- Remove skin and pit of the avocado.
- Add all the ingredients in a food processor.
- Mix well.
