1. Asian Quinoa Salad with Chicken and Cajun Nuts

(Gluten free, Dairy free, Sugar free)

Serves 4


  • 1 cup cooked and cooled quinoa
  • 2 grilled chicken breasts
  • Handful of finely chopped chives or spring onions
  • 3 tablespoons finely chopped ginger
  • 2 carrots shredded
  • ½ head red cabbage shredded
  • ½ head Iceberg lettuce leaves shredded
  • Handful of tablespoons chopped -Toasted Cashew nuts
  • Fresh coriander – a full punch, leaves separated
  • 1 Red chili thinly sliced -optional

The Dressing

  • 2 tablespoons light Soy sauce
  • 1 tablespoon of honey or Agave syrup
  • 1 tablespoon Rice vinegar
  • 1½ table spoons Sesame oil
  • 2 tablespoon of ginger juice – by squeezing shredded fresh ginger.

Start making the dressing by combining the soy sauce, honey or agave, rice vinegar and sesame oil in a bowl or jar and whisk till well combined.  Adjust saltiness by adding water if needed. Put a side for later.

Now in a large bowl, combine the cooled quinoa, the sliced grilled chicken, the shredded carrots, the chopped coriander, the shredded red cabbage, the shredded lettuce, the finely chopped ginger, the finely sliced chives or spring onions. Add the dressing and mix it well till all the ingredients are coated with the dressing. Top with the chopped roasted Cashew nuts and some fresh coriander leaves and some red chili slices (optional) enjoy

2. Overnight Coconut Chia pudding

(Gluten free, Dairy free, Sugar free)


  • 2 tablespoons chia seeds
  • 1 cup coconut milk – or dairy free milk of your choice
  • 2-3 tablespoons of honey or agave syrup
  • Mangos or any seasonal fruits of your choice. I recommend papayas or berries
  • 1 teaspoon lemon zest

Dissolve the honey or the agave with the coconut milk and add the chia seeds and mix well to avoid any lumps. Place in a container and leave overnight or for few hours in the fridge. The chia seeds will absorb the liquid and a pudding like consistency will be formed. Serve and top with fruits and lemon zest. Enjoy.
